I was a little skeptical at first about this cheap piece of plastic that promised to do everything the more expensive sharpeners do but I gave it a try and I'm very impressed. Using this is extremely easy and quick. I used to use a stone+oil but staying within those few small degrees can be time consuming and difficult. This takes all the guesswork out of it. They say that a dull knife is more dangerous than a sharp one, but this little knife sharpener got my knives so sharp in just a few strokes, that I cut right through a piece of chicken and into my finger in only a second.
I'd been looking for a service to sharpen my drawer full of dull knives when I happened on this sharpener. I used it on a few knives and discovered that the blades were returned to their original sharpeness in three-four strokes across the sharpening slot. Now I can do it for myself, saving time and money.
I now have a drawer full of sharp knives. I just have to learn to use them without doing my fingers as well!
Highly recommended.

I'll pit this sharpener up against any of the expensive contraptions. When the cutting edges wear out after 30 or 40 sharpenings, reverse the edges. When it wears out, so what. Just buy another one and you are still dollars ahead of anything else.Customer Review: A Handy Knife Sharpener

I ordered the AccuSharp 001 Knife Sharpener with high hopes but low expectations. I have had several knife sharpeners over the years that did little to improve a knife gone even slightly dull. Thanks to the AccuSharp I can now use knives I haven't used for a long time because their edges were almost completely gone. AccuSharp is bringing them back! I don't know why this works so much better -- maybe it's the fact that it holds the blade in the optimum position and sharpens both sides at once, so there is not human error involved. Where knife sharpening is involved, I seem to be more human than most.
Excellent product at an unbelievable price!
