This is the best and easiest to use knife sharpener I've ever owned. I've tried diamond hones, crock sticks (of all types), Arkansas stones, etc., but this sharpener is quick, easy, inexpensive, and actually works. A few passes and the blades on my kitchen knives and pocket knives are sharper than they were when new. On the first few passes you can actually see the sharpener blades remove tiny shavings of metal to produce a smooth clean edge. I can't see where it would develop any problems in daily use, and it is dishwasher-safe. I like it.

Over the years, I have preferred regular carbon steel knives to stainless steel knives, due to the fact that the stainless are so difficult to sharpen. Not anymore. This sharpener outshines all the sharpeners I have had over the many years, which include ceramic, diamond embedded stone and many others.

When using the Accusharp on knives that have very little edge, you can be aggressive with the tool. It is going to take a lot of shavings off your knife. Once you get a good edge you should use your steel and/or an old leather strap to finely hone the edge. Subsequent uses of the Accusharp can be done more mildly in order to not take off as much metal. Use the steel between uses of your knife and the Accusharp only when you can feel or tell that the knife is not cutting well.

All your old knives that you thought would never be used again can be brought back to 'like new condition' with this tool. I highly recommend it.

I purchased this because it was recommended by Christopher Kimball from America's Test Kitchen/Cook's Illustrated. I actually tried to find it in the specialty stores that sell kitchen/cooking equipment, but no one carried it. One of the store owners tried to tell me that he was sure that I must be talking about Chef's Choice sharpeners. While I understand that Chef's Choice has a good reputation, they are very expensive. Christopher Kimball said that it works just as well as the expensive ones, and he was right. It works great and it is small enough to store in a drawer, instead of the electric models that take up shelf space.

Was leery at first, but with all the good reviews, deciced to try this sharpener. I was pleasantly surprised to find that it performs as good or better than described. My knives aren't expensive ones, but after using the Accusharp, they cut as if they were the top of the line cutlery. I highly recommend this sharpener.
