Watching a chef draw a blade across a classic butcher's steel looks pretty slick but don't try it at home unless you really know what you're doing. The contraption features two 4-inch-long, diamond-plated rods mounted into a plastic base. The rods form a V shape and are permanently aligned at the proper 20-degree sharpening angle to produce the correct edge every time. The ultra-abrasive, coarse diamond surface efficiently hones an edge in just a few light strokes along the inside of the "V." The DiamondVee is cleverly designed to accommodate either righties or lefties and has a plastic safety guard to protect the opposite hand.
