Description of Kasskonnen® Baguette Brotform
Kasskonnen® brotform is made of high quality natural cane measures over 8MM in diameter, which is thicker and stronger than the material used by many competitors, one of the reasons why Kasskonnen® is the leading brand used by commercial bakeries in US.Kasskonnen® brotforms comply with German Food, Articles of Daily Use and Feed Code (LFGB), section 30 on materials and articles intended to come into contact with food. Kasskonnen® brotforms comply with the general requirement (Article 3) in European Union Regulation (EC) No. 1935/2004 on materials and articles intended to come into contact with food.
A well constructed brotform shall have very few nails sticking out on the inside surface. Each Kasskonnen® brotform is carefully crafted to minimize sticking out nails and uneven gaps.
Hand crafted bread mold made of cane, brotform, also known as brotformen or banneton, is used to form and shape artisan loaves during the proofing/raising stage.
Before You Use it The First Time - Wipe with a cloth towel.
Use Your Brotform - First prepare the basket by coating it thoroughly with flour and shaking out the excess, then place the kneaded dough in the basket until it rises. After dough has risen, take the dough out and transfer it to a baking sheet for oven baking.
***Do not put the brotform in the oven, it is not for baking.***
Cleaning Your Brotform - After each use, shake and brush out excess flour. You may rinse it lightly, but remember to hand dry it with a towel right away after rinsing. Let your Brotform air dry thoroughly before storing the basket.
