Customer Review: One out of two ain't bad?

I used these pans today for the first time. I did so reluctantly because I read the boards on the Cook's Illustrated website and the ratings weren't too great. I bought two pans. One was perfect and roasted with no problems at 400 degrees. The other one warped at 475 degrees. Not sure what to make of it. The one that warped still remains slightly so even after cooling down. All I can say is buy at your own risk. I'm thinking of trying Sur La Table's new brand. It says no warping on the packaging and you get two pans for 20 bucks. They do not mention the gauge, however. These Lincoln pans are 13 gauge which is the thickest supposedly. (The higher the number = less gauge.) Thickest is supposed to be the best according to the CI boards, less condusive to warping. C'est la vie...

Update: 11/2/07 The pan that warped slightly has straightened itself out. I simply stacked the two pans overnite and voila! So if I could, and Amazon won't let me, I would change this rating to FOUR stars.

I was surprised at the thickness and durability of these sheet pans. They are extremely durable and definately do not warp with even the most intense heat. The gauge is so thick that it sounds like a solid cooking pan when you knock on the back of it! You will not be dissapointed by these.

This pan looks great: large, with good sides, as if it could do any number of chores. It probably can, but the one chore I most need it for--broiling--seems beyond it. It buckles, so that a quarter of it rises and tips its contents. However, it washes easily, and will even fit in the dishwasher, if necessary.

A customer posted a picture of their warped pan. It clearly says Wearever, not Lincoln. This is the second posting I have seen where someone is reviewing a product that isn't even the correct product. Look closely at these reviews.

Cooks Illustrated recommends the Lincoln jellyroll pan and they have not steered me wrong yet, so I plan to purchase it.

Customer Review: Possible defective manufacturing

I bought this pan which I thought and still hope is a Lincoln Foodservice Sheet Pan, the one identified in Cooks magazine. The stamp on the back says Wearever, which apparently Lincoln makes.

After one use and the pan in the oven at 400 degrees for less than 3 minutes, the pan warped! Not only that, it is still warped and will not straighten out. Maybe Cooks Magazine had the one and only pan that did not warp, or there is a problem with the manufacturer.
