Customer Review: Mine Warped After One Use

I desperately wanted to find the sheet pan recommended by Cooks Illustrated. I have the original Lincoln sheet pan, 13 gauge, and it is fantastic. I've baked with it several times and it is as flat as the counter. I ordered this pan because I was told it is the same pan under a new name. Well, I can attest to the fact that the pan I received, the sheet Pan Half Size - 12-7/8'' x 17-3/4'' Heavy Duty, 13 Gauge by Vollrath is not the same as the Lincoln Wear-Ever 13 gauge Half Size - 12-7/8'' x 17-3/4'' Heavy Duty 5314 pan I have and love. After having to return and then receive replacements for warped pans straight out of the box, I finally kept one of the Vollrath pans. I needed to bake bread cubes for a bread pudding. I only had to lightly toast the cubes until they were dry. This brief time in the oven was enough to reshape the pan so that one corner does not touch the surface it is placed on but instead the corner is about 1 1/2 inches off the surface and points to the ceiling. This HAS to have a major effect on baking as the baked goods in the pan will not be getting the benefit of the heat of the wire racks in the oven.

The only use this pan now has for me is when I need to place 2 pans under a cake pan as it bakes.

I too purchased this pan because it was recommended by Cook's Illustrated. 10 minutes in a 400 degree oven was all it took to warp my pan. I called the company and they agreed to take them back. They are paying for return shipping, but we'll see if they reimburse me for the shipping I paid to have them delivered to me...

Tip: Go to your local restaurant supply store. They are bound to have half-size heavy duty sheet pans for half the price, and no shipping charges!

I purchased this pan, like some of the others, based on a Cooks Illustrated review. I was excited when I received it as it seemed quite sturdy. All pans I've had in the past have been cheaper, flimsy ones and all warped and "bent" in the oven. I used this new pan for the first time on Thanksgiving in a 450 degree oven and it warped after being in the oven only 10 minutes -- one of the corners "bent" up, just like all of the other pans I've had in the past. Disappointing -- and surprising -- especially since it does have a "heavy duty" feeling to it.

This pan is now the most important cooking tool I own. It beats all other baking sheets, hands down. It heats evenly, doesn't warp or bend, even at 500 degrees, and is a joy to use. I highly recommend it!

I did read the recommendation for this pan in Cooks Illstr'd and was intrigued. I read most of the Amazon comments but still had to try it and what a delightful pan this is!!! have thus far made cookies and bisquits on it (never over 400 degrees yet) and they've been perfecto! My Walmart/Target bought cookie sheets that are darker than night always need parchment or a silicone sheet. no need on this one...yet! if you like to cook and like nice color on the bottom of your baked goods then this sheet pan is for you! easy clean up and no warping thus far!!
