I never hand sharpened with water stones before. Not sure if my bevel angles are 100% correct but the knives are sharp. After 10 years my expensive knives were pretty dull and now they are good. I bought this and the 1200 grit stone. About 10 minutes work on each knie and they are cutting well again.
