I, like many others here, had read about this cookie sheet from a review in the Cook's Illustrated magazine. They were spot on with the quality of this pan and it makes awesome cookies. I was amazed especially at the perfection of texture I got with more cake-like cookies, they went from never browning and being a denser, chewier cookie on my previous air bake pan to being lightly browned and more of a melt-in your mouth consistency. I would definitely recommend this cookie sheet... no sticking worries with parchment paper use!Customer Review: Best cookie sheet on the market

The Vollrath is a fantastic cookie sheet. I received this one and a Chicago Metallic cookie sheet for a gift and this one is definitely the best (the other one is quite good, too). This cookie sheet is heavy and very thick. It bakes cookies evenly and DOES NOT BURN. It washes clean with soap, warm water and a cloth.
I just finished baking sugar cookies for a neighborhood BBQ and they all turned out perfectly, thanks to this great pan. I even forgot to use any cooking spray or parchment paper (that's what happens when you're cooking with a toddler) and I had zero problems with sticking.
One note - because the pan is very thick, it holds heat for a very long time so get your cookies off the pan about 2 minutes after you pull them out of the oven. And don't even try to reach for the pan with a bare hand unless it's been out of the oven for a long time!

After reading these were "The Holy Grail" of cookie sheets thought I'd give them a try. That is a pretty hefty reputation to meet and that they did. My first batch of oatmeal raisin cookies were evenly done without any burned edges. I found the cooking time to be increased by approximately 3 minutes. This can probably be attributed to their greater mass. Clean up was accomplished in the dishwasher without any pre-cleaning required. People think I'm pulling their leg when I tell them that the pans you use can make a huge difference in your cooking, but I figured it out around the time I bought my first All-Clad skillet.
These are the cookie sheet equivalent of that. Thick, heavy, easy to clean. I still have that first skillet, and I expect to have these in 15 years, too, turning out better food because of better tools.
